Nisei grew on word of mouth and kept paid marketing deliberately small, with a strict annual cap set by the chef-owner. The question was whether careful spend could grow reservations without diluting the brand or breaking the ceiling. It could.

Starting condition

The account predated the engagement and paid marketing was intentionally minimal. The brand did not need volume for its own sake. It needed each incremental dollar to produce a measurable booked action without cheapening how the restaurant shows up.

The work

Reservation-first search campaigns tuned monthly against the annual cap. The Google profile run as an active surface: photos, posts, menu accuracy, and review signals kept current, because for a destination restaurant the profile drives more real-world actions than the website.

Deliberately excluded: broad awareness spend, discount messaging, and any term the restaurant could not genuinely win. When a term is not worth chasing, that call is made out loud.

Methodology and limits

Booked actions are platform-reported conversions: reservation clicks, calls, and direction requests. They are compared year over year on matching periods. Dollar-value figures are modeled from booked actions at conservative per-cover assumptions and are always labeled as estimates. What this page does not claim: that every booked action became a seated cover, or that paid media deserves credit for demand the brand earned on its own.
